Weekly Menu

I really enjoy cooking and baking. Every week I anticipate the release of the newest online store flyer and then think up a fun menu to cook. We like to eat food that’s in season and local (if possible); however, we live in the North so our local produce has a very short growing season. Our beef and pork come from a local farmer and we are trying to raise meat rabbits (more on that topic later). Every night I feed four people on our food budget: Jeremie, myself, “Angel” our teenage Korean student and the always hungry Monkey.

Here is our dinner menu for November 14-20:

Saturday Dinner with extended family.
Sunday – Pulled pork on homemade buns with sliced veggies
Monday – Roasted sweet potato soup with homemade bread and pickles
Tuesday Chunky chili with cornbread
Wednesday Chicken and lentil curry with basmati rice and roasted squash
Thursday Tomato mac and cheese with Italian sausage and peas
Friday Monkey and I are leaving for a week to visit extended family.

Snacks: puffed wheat squares, bran muffins…

I should also mention that I use the linked recipes as guides for my meals. Some of the recipes I have linked are new to me but others I have used before.

I am trying to work up a menu, too! I love cooking, though time isn't always on my side. I am trying out a new cookbook by Jessica Seinfeld and she is all about incorporating veggies into meals via purees. Since I am making purees for Piper, I might as well make a bit more and sneak it into our big-people food.
I think quesadilla's and some form of good-for-you mac+cheese are on the menu.

I was excited to see Chicken lentil curry…. we like lentils! Then I saw the mango, coconut, and all the ginger. Yech! 😛
