Eating gluten and dairy free eliminates most of my usual breakfast foods. In an effort to find something filling to eat in the morning other than fruit I came across a recipe in Cooking with Coconut Flour for coconut honey muffins. These muffins are simple to make and are a hit with the Husband and little ones.
Coconut Honey Muffins
adapted from Cooking with Coconut Flour
makes 12 muffins
4 Tbsp. coconut oil, melted
6 Tbsp. honey
1/4 cup coconut milk
1/2 tsp. vanilla
1/2 tsp. salt
6 eggs
1/2 cup coconut flour
1/2 tsp. baking powder
Preheat oven to 400F (205C). Add the coconut oil, honey, vanilla, salt and eggs to a bowl and whisk until well blended. Add coconut flour and baking powder and whisk until smooth. Divided into 12 muffin cups and bake for 15 minutes.

I've found that when I feed my kids breakfasts like this it will be hours – hours!- before they are begging me for something to eat. Yesterday it was 6 hours before I heard, "I'm hungry"!
Now, please don't think that I'm starving my kids. 🙂 On the contrary. They are eating healthy high density foods and they are more happy – as am I.
Thanks for sharing this recipe. I might also make a note that some coconut and almond flours are not defatted (they aren't here) so people may not need to use oil in some cases. (I had a couple of oily disasters in my oven before I learned this.)
