A Winter Weekly Menu

After the rush of festivities that come with the Christmas holidays and New Year celebrations, January can seem a little slow, quiet and chilly. Winter is the time for hearty meals and quiet evenings knitting and reading. It’s also a good time to take stock of the pantry and note what needs to be replenished and what needs to be consumed.

lunchSalmon patties sourdough sandwiches. 
dinnerSweet potato soup.

lunch: Leftover sweet potato soup.
dinner: Tart-hot beef curry (660 Curries), steamed rice and oven roasted cauliflower.

lunch: Vegetable fried rice (using leftover rice).
dinner: Vegetarian lasagna.

lunch: Leftover lasagna.
dinner: Potato pancakes served with sour cream and apple sauce.

lunch: Leftover potato pancakes.
dinner: Lamb shank and neck with white bean puree.

to do: soak pinto beans for refried beans
lunch: Hard boiled eggs, raw fruit and veggies, and cheese.
dinner: French lentil soup.

lunch: Grilled cheese sourdough sandwiches and leftover soup.
dinner: Chipotle bean tostadas.

The lasagna was so big it looks like it will override the potato pancake plan!
