For the last couple days were been eating our way through leftovers and repainting the living room so I haven’t had the chance to post my meal plan yet. I’m sure you don’t mind. I know that that my Weekly Meal Plans aren’t the most riveting posts. I really don’t think it’s possible to make what I plan to eat for the week riveting. Hopefully it gives you some ideas for your own weekly meal plans if you feel stuck.
This week has three special days in it. Three! How fun is that. Tuesday is Mardi Gras (or fat Tuesday), Wednesday is the first day of Lent, Ash Wednesday, and Thursday is Saint Valentine’s day. I have a special post for each of those days in the works but all good celebrations needs good food. And so, with that, I share with you our (short) weekly meal plan.
Tuesday (Mardi Gras)
Wednesday (Ash Wednesday)
lunch: Leftover crepes.
dinner: White bean and garlic soup.
Thursday (St. Valentine)
lunch: Leftover soup.
dinner: Beef rouladen.
lunch: Hard boiled eggs, raw fruits and veggies.
dinner: Lentil and sweet potato curry with rice.
